Frequently Asked Questions About Tortennascherei

A Conversation with Master Pastry Chef Astrid Vetter

Tortennascherei is a one-woman bakery in Schönberg in the Stubai Valley, where unique, modern, and custom sweet creations are crafted: modern wedding cakes, sweet tables, party favors, and much more. Owner and master pastry chef Astrid Vetter places great emphasis on personalized consultation, professional execution, and the regional origin and quality of the ingredients she uses. Her attention to detail rounds out her offerings.

How did you end up in this profession?
‍Even
as a little girl, I loved helping my mom bake cakes and Christmas cookies. After my first few days of shadowing at a pastry shop, it was clear that this was exactly the profession I wanted to pursue. So I completed an apprenticeship as a pastry chef, then worked as a head pastry chef at various hotels, and passed the master pastry chef exam in 2017. My passion for the craft has remained, and since then I can’t imagine a more wonderful and creative career.

What makes you so special?
‍For
me, my work is a passion. I love what I do. Every couple is unique to me, and that’s why I strive to design wedding cakes and sweet tables that are tailored to each one. I take plenty of time for this and try to accommodate all their wishes. When working with ingredients, I prioritize quality and locally sourced products. The creation and production of the wedding cake are carried out with great care, expertise, and precision. After consulting with the florist or the venue, I coordinate the delivery and setup of the wedding cake and other treats so that everything runs smoothly behind the scenes and the couples don’t have to worry about a thing.

What do you like about the wedding industry?
‍What
I like best isthe challenge of creating a new, unique, sweet work of art for every wedding. I spend several days in the bakery working on a wedding
cake along with a sweet table, and I’m especially happy when I get to set it all up myself at a beautifully decorated venue. Sometimes I get to witness firsthand how the guests—and especially the bride and groom—rejoice over their perfectly presented wedding cake and the little treats. That’s how my work, crafted with so much love, becomes a highlight of the wedding.

What trends are currently emerging?
‍For a few years now, the “semi-naked cake” has been a popular choice for wedding cakes: the cake is only lightly coated with frosting, so that the cake layers are still visible. It’s then usually decorated with fresh flowers, fruit, or berries—giving the wedding cake a light, natural, and modern look. Buttercream and chocolate are perfect for highlighting color or texture. Used creatively, they make the cake truly unique. If you’re looking for something elegant and simple, a fondant cake with molded or real flowers, gold leaf, and shimmering macarons is the way to go.

How would you like to get married yourself?
‍Phew
, that’s a good question. As a wedding planner, I naturally see many different options. Since I spend a lot of my free time in the mountains and out in nature, I’m leaning toward a relaxed and simple mountain wedding. Though, of course, a great wedding cake is a must, even at a mountain cabin. :)
